  2. Onions – 2
  3. Fresh tomatoes – 4-5
  4. Mustard oil – 3 tsp
  5. Turmeric powder – 1 tsp
  6. Panch phoran – 1/4 tsp
  7. Salt – To taste
  8. Coriander leaves – For garnish

How to make Masor Tenga

STEP 1

Sprinkle 1/2 teaspoon of salt and 1/4 teaspoon of turmeric powder on the fish pieces. Rub them gently to coat evenly.

SALTING

STEP 2

  • Heat 2 tablespoons of oil in a kadai until it starts smoking. Carefully add the fish fillets and lightly brown them on both sides for 1-2 minutes. Avoid over-frying to ensure the fish remains moist and tender.
  • In the remaining oil, add the panch phoran and let it crackle over medium heat.
  • Add the chopped onions and fry on medium heat until lightly browned. Then, add the salt, turmeric powder, and chopped tomatoes. Let it cook for 8-9 minutes, covered with a lid.
  • After 8-9 minutes, add 3 cups of warm water and increase the heat. Once the curry comes to a boil, adjust the salt to your taste.
  • Add the pieces of fish and continue boiling the curry for 5-6 minutes to allow it to thicken. Remove from heat.
